Cantuccis With A Smell Of Christmas

This time of year My World is filled with baking cookies and bread. It´s soon Christmas as you know and I always have a lot of preparations to do. This year me and my family are going away for Christmas so we decided to do just some simple Christmas preparations at our home. Still I cant´t keep my eyes from my recipe collection over all tasty and sweet goodies I usually bake. At the end of this post you´ll find the recipe for delicious italian biscuits, cantuccis, with the taste of gingerbread. A quick and very easy recipe I got from my dear blogfriend Mikabella. Please be free to copy it and try them this Christmas. I guarantee your guests will love them.  




2 eggs
3 cups sugar
200 g nuts, hazelnuts and almonds
4-5 cups flour
1 tablespoon vanilla sugar
1 tablespoon baking powder
1 pinch salt
1 tablespoon gingerbread spices

Whisk the egg whites hard and fluffu with salt.
Mix egg yolks with sugar and spices.
Fold into egg whites to sugar mixture.
Pour in the chopped nuts.
Stir in the stifted flour and baking powder.
Stir as little as possible.
Divide dough in half and shape into two "loaves" about 3 cm high and 5 cm wide.
Place the "loaves" on baking sheet with parchment paper.
Bake in oven 175 degrees Celcius for 40 minutes.
As soon as you remove the cakes from the oven, cut into diagonal pieces.
Allow to cool on a plate.

Mmmm, så mycket gott!! Förstår också att det ska vara Saffransglögg i år, blir till att investera i en sådan! Skäms nästan lite att berätta att när jag städade ur gamla skafferiet så hittade jag oöppnade årsglögg från 2007...undrar om den går att dricka fortfarande? Får väl prova någon helg när jag är ledig och inte ska träffa folk, ifall man blir riktigt sjuk. Det vore ju synd att slänga de fina dropparna om de är njutbara fortfarande!
